K does pretty solid with eating whatever I put in front of him.  Some days are better than others, so when he is having an anti-veggie day I throw some veggie muffins in the mix.

 

Banana-Carrot Muffins

Ingredients:
1/2 coconut oil, melted
3 bananas, mashed
1 4 oz cup of yogurt
3 carrots, shredded
2 eggs, beaten
1/2 cup whole wheat flour
1/2 cup almond flour
1/4 cup oat flour
1/4 cup flaxseed meal
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
dash of salt


Mix together the wet ingredients.  In a separate bowl combine the dry ingredients.  Add the dry ingredients to the bowl of wet ingredients.  Stir until combined.

Divide into 12 muffins tins.  Bake at 350 degrees for 15 minutes.
