J and I would listen to a classic rock station on the way to church and every Sunday morning the guy would do the same commercial for this Italian restaurant in Brooklyn. He would go on and on about different types of pasta sauce. Giggles would ensue when he came to puttanesca… mature crowd we are. But this sauce recipe just made me think about how ridiculous and repetitive that commercial was. ANYWAYS this sauce is not your typical Italian style sauce but it is simple and easy to whip up on a busy weeknight!
Easy Pasta Sauce
This is a red, creamy sauce with a rich coconut flavor. The greek yogurt gives it a creamy texture with no added fat and good punch of protein.
1 6oz can tomato paste
1 13.5oz can full fat, unsweetened coconut milk
2 tbsp chopped garlic
1/2 tsp paprika
1/2 tsp dried oregano
salt and pepper to taste
1 cup non-fat greek yogurt
Add a small amount of coconut oil to your sauce pan. Add your garlic and salt + pepper and let simmer for about 2-3 minutes. Add the coconut milk and tomato paste. Stir together. Add in the rest of your spices. Let the sauce simmer for 5 minutes. Add in greek yogurt. Simmer all together for an additional 5 minutes.
I sautéed in spinach and then served over Banza chickpea pasta with chicken.
