chocolate chip cookies-a healthy twist.

I didn’t make any official resolutions this NYE, but I am trying to be a little more mindful about what I put in my body.  I could never give up sweets though so I set out to make a chocolate chip cookie that wasn’t a total sugar bomb and had some protein + fiber.  These are quite delicious and they are just sweet enough to satisfy the sweet tooth!

 

chocolate chip cookies

dry:
1 cup almond flour
1/4 cup whole wheat flour
3 tbsp sugar
1/2 tsp baking soda
1/2 tsp salt

wet:
1 egg
3 tbsp ghee (or butter), melted
1 tbsp peanut butter, melted
1/2 cup chocolate chips

 

Preheat the oven to 350 degrees.

Mix together the dry ingredients.  Combine the wet ingredients in a separate small bowl, or teacup like I did :). Mix the wet ingredients into the dry.  Bake for 12 min or until slightly golden.

I finished up two open bags of chips so I had some milk chocolate and some white chocolate chips.

I like to have a cookie right out of the oven BUT as evidenced by the top right corner, these cookies need to cool or else they are a little crumbly.

I plan to store them in the fridge so I think that will help to keep them firm.
