cinnamon rolls- the montclair bread company recipe.

This quarantine has me doing all the baking so I participated in an instagram bake off for fun.  Even though my photo didn’t win, (I don’t see how it didn’t… the cutest little boy ever was holding the roll 😉 ) these were some great cinnamon rolls!!

ingredients for the rolls:
3 1/2 cups flour
2 tablespoons sugar
1 1/2 teaspoons yeast
1 1/2 cups milk
1 egg
1 teaspoon salt
1 stick unsalted butter
1 cup brown sugar
2 teaspoons cinnamon

for the icing:
1 sticks butter
1/2 cup (half of an 8oz package) cream cheese
3 cups powdered sugar
1 teaspoon vanilla extract

directions:
Using a dough hook, mix flour, sugar, yeast, milk & egg on low speed for 3 minutes.  Add the salt, mix on medium speed for 8-10 minutes. While mixing, add small chunks of butter one at a time.

When mixing is complete, place in an oiled bowl or container & cover so it is airtight. Let rest for 30 minutes. Fold the dough – all 4 sides to the middle – rest another 30 minutes.
Dump the dough onto a floured surface & roll into a rectangle. Mix the brown sugar & cinnamon together, spread it evenly across the dough surface. Start at the top edge of the rectangle, tuck and roll the dough down to the bottom edge. Use the heel of your palm and press down to seal off the edge – all the way across the log. Use a serrated knife, cut the log in half. Then cut the halves in half and then the quarters in half – creating 8 equal pieces.

Place the buns, swirl side up, in a greased 9×13 pan. Cover and let rise for 1-2 hours. The buns should fill up the space between them so they’re all touching.
Bake at 350 degrees for 25-30 minutes.

While you’re waiting, make a batch of cream cheese frosting to smear on the buns when they emerge from the oven.

Cream the butter & cheese, add sugar & vanilla, start slow to incorporate the sugar, then mix on high for 5-6 minutes or until frosting is light and fluffy.

If you wait until the buns cool, the frosting will stay fluffy and tall on top of the buns. If you smear the frosting on while they’re still warm, it melts into the creases and gets inside the buns.
