light and fluffy white chocolate chip pecan cookies

I made these cookies with the help of K.  It may have taken twice as long, but he had fun standing on the chair and helping me mix and pour.  These cookies are light and fluffy and leave plenty of room to have 2 or 3 🙂


light and fluffy white chocolate chip pecan cookies

1 cup almond flour
1 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup butter, softened
1/3 cup maple syrup or honey
1/3 cup of sugar
1/2 cup white chocolate chips
1/2 cup pecans

Pre-heat your oven to 350 degrees.  Combine dry ingredients (not the sugar) in a medium bowl.  With a hand mixer or stand mixer, blend together the butter and sugar.  Add in eggs one at a time.  Slowly add dry ingredients into wet ingredients and mix on low until combined.  Stir in white chocolate chips and pecans.  Place small rounded balls on a cookie sheet, about 2 tbsp per ball.   Bake for 12 minutes or until tops start to brown.



You can change up your mix-ins to fit your taste.  I used white chocolate because that’s what I had on hand.  I think milk chocolate chips and walnuts would be good too!
