the world’s GREATEST corn muffins.

This corn muffin loving pregnant lady is quite thrilled with these gems.  I adapted these from this recipe which is supposed to be a true recipe for cornbread served at Disneyworld.  These corn muffins are moist and sweet and have the best crunchy crust on top!

Moist + Sweet Corn Muffins

1¾ cups almond flour
¾ cup cornmeal
1¼ cups sugar
1½ teaspoons salt
1 tbsp baking powder
½ cup slightly melted ghee
2 eggs
1 cup milk

-Mix flour, cornmeal, salt, baking powder, and sugar together in a medium bowl.
-Combine milk, eggs, and ghee in another bowl and mix; slowly add wet ingredients to the bowl of dry ingredients.  Mix only until ingredients are incorporated.
-Fill muffins cups to the top.  I think I filled up 9 cups.
-Bake at 375°F for 20-25 minutes or until the tops are golden brown.



I had mine with strawberry jam and K had his drizzled with honey
