But really, who does?? So in this house whenever I have a bunch of meal prepped vegetables that we are just sick of eating as is… I do a little repurposing.
I chop them all up.
I add in a can of beans. (After I took this picture I chopped the beans up.)
I then mixed in 2 eggs + 1/2 cup bread crumbs + salt, pepper, and garlic powder. I heated up a good amount of avocado oil in my pan and dropped these guys in. Viola! Veggies that sound good again!
