I bring you a quick and easy dinner recipe today!
Chicken Stir Fry
1/2 cup corn starch
1/2 tsp salt
1/2 tsp black pepper
2 medium chicken breast cut into cubes
1 tbsp sesame oil
1 tbsp fresh ginger ( I buy this)
2 tbsp garlic, chopped (taking Easy Street again, I buy this)
1/2 cup soy sauce
1/2 cup water
2 Tbsp honey
12 oz fresh snap peas
2 carrots, peeled into thin strips
Combine cornstarch and salt + pepper. Add chicken pieces and toss to coat.
In a large pan over medium heat add in avocado oil or another high heat cooking oil. When oil is hot, add chicken to the pan. Brown each side. Remove chicken from the pan and set aside. You will add the chicken back to the pan at the end to finish cooking.
Don’t clean out your pan! Reduce the heat to medium-low and add sesame oil, ginger and garlic. Stir constantly and cook about 1 minute. Add soy sauce, water and honey to pan and whisk until it starts to thicken.
Add chicken back into pan with snap peas + carrots and let simmer in sauce until the chicken and veggies are completely cooked.
Serve with rice or as is for a low carb dish!
