As Queen of the quick breads I have another one to share. I love that they are a fast and easy option for breakfast so I have been experimenting to make one with a bit more nutritional punch than my regular banana bread go to.
Gluten Free Banana Nut Bread
1/2 cup cashew butter
1/4 cup brown sugar (or honey, maple syrup…)
3 mashed bananas
2 tbsp coconut oil, melted and cooled
1 tsp vanilla
2 1/2 cups almond flour
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
possible add ins: cranberries, raisins, pecans, walnuts, chocolate chips…
Mix together your wet ingredients in a medium size bowl. Then separately mix together your dry ingredients. Slowly add your dry ingredients to your wet and mix until blended. Lastly mix in your “add in” if you wish. I didn’t do anything this time but I think cranberries and sliced almonds would be really good! Bake in a loaf pan at 350 degrees for 45 minutes or until baked through.
It is so so moist! I usually top a slice with some almond butter. This is a banana bread that you can feel good about!
