I put this dish together super fast last night and it was SO GOOD! We usually will order take-out on Friday nights but we just couldn’t decide what to order so I whipped this up with items I had in the house and it was delicious!
One Pan Garlic Mushroom Chicken
-2 chicken breasts sliced in half, pat them dry. Season with salt+pepper and Trader Joe’s Onion Salt (it is basically onion and garlic powder with dried chives)
-Trader Joe’s Frozen Mushroom Medley (or you could use fresh mushrooms)
-Trader Joe’s Green Vegetable Foursome (or any green veggie of your choosing)
-2 tablespoons minced garlic
-1 tablespoon dijon mustard
-1-1/2 cups light cream
-1/2 cup parmesan cheese
-Salt + pepper
-1/2 teaspoon cornstarch (if you want a thick sauce)
-Sear the seasoned chicken until almost cooked though. It will cook the rest of the way when you add them back to the pan at the end. Remove chicken from pan and set aside. Don’t wipe out the pan!
-Add olive oil to the pan. Add 1 tbsp of minced garlic and sauté 1 minute. Add 1/2 bag of TJ’s mushroom medley and 1/2 bag of the green veggie foursome. Cook until veggies are soft, about 4 minutes. Add in 1 tbsp minced garlic and 1 tbsp dijon mustard and sauté 1 minute. Add in light cream and parm cheese. Salt + pepper to taste. Add cornstarch here if you are going to, I didn’t and the sauce was plenty thick this time. Simmer and stir constantly about 2-3 minutes and then add the chicken back in.
-Let simmer 5 minutes or until chicken cooked through.
-Easy and DONE!
Topped with some extra parm and eaten while watching Pretty Little Liars: The Perfectionists.
