I can take zero credit for these delicious muffins as I found this recipe while scrolling Pinterest one day. The only changes I made was that I added raisins and sliced almonds to half of the batter and dark chocolate chips to the rest. I might try to do some altering to the recipe in the future but these I made for a friend so I needed to make sure they were perfect the first time!
Maple Oat Muffins.
Ingredients:
2 cups old-fashioned rolled oats
1 cup milk
1/2 cup pure maple syrup
1/3 cup oil (I used canola)
2/3 cup light packed brown sugar
2 large eggs lightly beaten
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
*Preheat the oven to 400 F.
Directions:
-Combine the oats and milk in a large bowl.
-Add the maple syrup, oil, brown sugar, and eggs. Mix until combined.
-Stir in the flour, baking powder, cinnamon, baking soda, and salt.
-Scoop the batter into your muffin tins and sprinkle with sugar
-Bake for about 20 minutes or until lightly browned.
I gave the chocolate chip ones to my friend and her family and held onto the almond raisin ones. Loved them!
