I have reached it.
The period of winter where I am over ittttt. I hate winter coats. I hate cold fingers. I hate being. stuck. inside.
So I have channeled my frustration into at least having some good and healthy food on hand. I am very picky with slow cooker recipes because I hate when everything just tastes the same and is just a bunch of mush. Littlemissfoodie posted a soup recipe which I took some inspo from and altered a bit to meet my tastes.
Winter Blues Soup
2 small yellow onions
3 carrots
a handful of fresh green beans
1 can of pinto beans
1 can of kidney beans
1 can of diced tomatoes
3 zucchini
1 lb of ground turkey
4 cups of vegetable broth
1 box of pasta (I used chickpea pasta)
Trader Joe’s onion salt seasoning
Chop up all of your ingredients. Brown the ground turkey. Add all the ingredients to your slow cooker.
I cooked it 4 hours on low. (I am sure you could also cook 2 hours on high). Cook your pasta and add in right before serving.
