I can’t even remember the last time I was in a mall (thank you online shopping) but K and I went yesterday. I had some returns to do and also took the opportunity to walk around a bit in case the weather didn’t clear up for a walk later. I recently started putting K facing out instead attaching his infant car seat to the stroller and he LOVES looking at everyone. He is Mr. Social and he made sure he flashed everyone his gummy whites.
While K napped I decided to get a run in on my treadmill. 38 minutes and just about 4 miles done. #activityjanuary. We actually ended up going for a walk too so we were extra active today. He looks cold haha but I promise he was quite bundled up.
K was a crabby patty for the rest of the night since he decided 20 minutes was a sufficient second nap. The afternoon was very dramatic.
For dinner I made chicken parm… minus the guilt. I cut up two chicken breasts and coated them in cornstarch + salt + pepper + grilled chicken seasoning. Then I pan seared the chicken and threw it in the slow cooker for 3 hours on low. The chicken comes out amazingggg. Super tender. I roasted a spaghetti squash at 400 degrees for 40 minutes. Then pulled the squash, added some Italian seasoning, marinara sauce, and mozzarella cheese.
J and I are really trying to clean up the diet. We are planning to do a meat free month in February so I have been compiling recipes in preparation. I usually create meals around a meat so it will be a good learning experience for me to have to get more creative with dinners.
Any vegetarian recipes you could recommend??
