Mama was BUSY in the kitchen. I had some time to food prep which always comes in handy for the days when I have zero energy to put into meals.
Spaghetti squash crust. This I have no recipe for as I totally wing it every time. But usually I mix the shredded squash with 2 eggs, maybe a 1/4 cup bread crumbs, 1/4 cup parmesan cheese, 2 tsp chopped garlic, and salt + pepper to taste. Baked at 375 degrees for 20 minutes. Then flip and bake another 10 minutes or until slightly browned. Add toppings and bake until cheese is melted. This photo is after the first flip, you want the top to be a little more browned up before you put on toppings.
“Pro” tips: Bake the squash the day before or else this whole process takes almost 2 hours. Squeeze out extra water from squash after baking. Use non-stick foil. The flipping process is tough enough…
Keto fat head pizza crust. I didn’t modify this recipe at all. This is SO SO good, awesome if you are doing the low carb thing. This has become our Friday night staple meal. I usually have some crusts frozen but it comes together really fast so you can do everything all at once and still have dinner ready in about a half hour.
Banana muffins. Inspired by Jen at Peanut Butter Runner (great blogger, check her out!). In place of the pumpkin I did banana, omitted apples, and added pecans. But, I have also made this recipe and followed it exactly and they are amazing. Very “fall” tasting.
Apple crisp. I have made apple crisp so many times that this recipe was just from my little old head. Apples tossed in cinnamon, nutmeg, flour, and sugar. Then topped with a mixture of butter, flour, and sugar. Baked at 350 degrees for about a half hour. Top this hunny with some vanilla ice cream.
Doing a “meal prep” sort of day like this is so helpful if you have a crazy week coming up. We now have a bunch of keto pizza crusts in the freezer ready to rock which is a great $ saver on the weekends when ordering take-out is tempting. We have a double oven (best purchase ever) so this probably only took me 2 hours. We are obviously on a “pizza” kick right now so this day was super helpful for us. If you are going to try any of these the keto fat head crust is a must try!
