THE KETO GUIDO.

J is doing keto. UGHHH C’MON I LOVE CARBS.  But I am being a supportive wife and cooking keto friendly.  Below has been a recent win of a dinner.

KETO PIZZA.

1 Medium sized spaghetti squash, roasted, and the insides pulled out with a fork.
Parmesan cheese, maybe 1/4 cup?
2 eggs
salt and pepper
Italian seasoning

I usually roast the pull the insides out of the squash the day prior or else this whole process takes like 2 hours.  We have learned that the hungry hard way.

Mix all ingredients together and smooth a layer on non-stick (CRUCIAL) foil.  Cook at 400 degrees for 15 minutes on one side, then flip (oh god often a disaster.  It’s worse than flipping an omelette) and 10 minutes on the other side. The trick to the flip: take foil out of pan with the squash on it. Then put pan over top and flip.

PERFECTION.

Add cheese and sauce.

No, we didn’t use all that cheese. But folks, we could have. We’re serious about cheese. And this is the best store-bought mozzarella ever. Highly recommended.

Cook an additional 10 minutes. Then broil on high for 5 minutes.

YUM. You’re welcome. This is a time-consuming but delicious semi-healthy pizza replacement. We love it!
