Well. Muffins really.
Breakfast is my favorite meal of the day. Mainly because I love all the breakfast foods. But now a quick and easy breakfast is the name of the game. And because it sometimes takes me 2 hours to eat breakfast, food that is good at room temperature is my best bet. Ha will I ever eat anything hot or cold again?!
Muffins have been a lifesaver. I try to find healthy recipes (MANY SAVED HERE) since they are often calorie bombs when store-bought. I usually will make some kind of muffin each week because putting in the 30 minutes of time when K is napping ensures I have something quick to grab for a couple of days.
I just have to share this one recipe since it is the best banana muffin I have made and I have tried MANY. The original recipe is here. I’ve tweaked it a bit. It also called for a loaf pan but muffins are more easily eaten with one hand. The only thing I don’t love is the amount of sugar, I am thinking that next time I will try 5 bananas and maybe 1/2 cup of sugar or honey and see how that goes. I also usually mix in walnuts and flaxseed to give them a bit of a boost. Or dark chocolate chips, because delicious. Really the world is your oyster with adding anything in these. I have even done strawberries and blueberries.
The BEST Banana Muffin.
1⁄2 cup coconut oil
3/4 cup sugar
1 1⁄2 cups whole wheat flour
1 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 teaspoon vanilla
Preheat oven to 350º
Mix coconut oil and sugar.
Add eggs and crushed bananas.
Sift together flour, baking soda, and salt. Add to creamed mixture. Add vanilla.
Mix just until just combined.
Pour into greased muffin tins.
Bake at 350º for 17 minutes or until golden brown.
I usually add a dab of almond butter or peanut butter before I dig in. This recipe is a keeper, I hope you give it a try!
